Appetizers:

Scallop and Melon Skewers - The grill brings the delicate flavours of Bay of Fundy Scallops and melon together. Accented by cured meats, these summer delights will bring new life to your grilling experience.

Grilled Oysters Anna - Atlantic Canada offers many varieties of oysters. Each location has its own signature and flavours. For the adventurous, a selection of raw varieties, and we will also be creating the classic Oysters Anna on the grill. Parmesan cheeses and Cayenne pepper, flavour this classic treat.

Main Course:

Grilled Salmon with Sage and Orange Butter, and Sole Rosettes - Technique is everything when it comes to grilling fish. We explore the differences between grilling white fish and fat fish (salmon, trout, mackerel), while creating one of the season's best recipes!
